New Thoughts

I really do not know much about Eleanor Roosevelt but I do like her quotes. Perhaps it is time to find a biography about her and learn some more. Our library in Vancouver is supposed to open mid June and I think I would prefer to get a print book if I can. For me the library is what I miss the most. Well, that and going to visit family. 🙁

We are on the hunt for a new waffle maker and apparently this is a hot item for these Covid days. We have been looking for about a month and most stores are sold out and won\’t be available for a couple of weeks. So far this year we have tried two but they had problems with uneven cooking being the biggest complaint. We will keep on and someday . . . and of course trying to find a waffle iron that doesn\’t use teflon makes the search a bit more difficult.

Oh well. New day! This morning I found a good pancake recipe that is pretty good. I tried cooking it on an aluminum griddle on our stove and that is going to take a bit of a learning curve to get the temperature (gas stove) and timing right. I\’m so used to cooking with teflon and it does make my standards for easy cooking much more difficult!

My newest love for cooking is with old fashioned cast iron. We have three fry pans and one big pot and now I\’m on the hunt for a griddle. I never realized what a difference there is in cast iron cookware. I found this one small fry pan at an estate sale and it is wonderful. Aged and very heavy. I bought a medium sized griddle at Fred Meyer or someplace and it is lighter than the small one. Jon did get me a large cast iron (very heavy) for Christmas so I\’m pretty settled in for fry pans. 🙂 Anyone else in love with cast iron?

And the book goes on . . .

I now have three stories completed for the book and promises for a couple more. Very encouraging. So far they have been very fun to do – I\’ve found that talking to people about their story is much more exciting than just getting it already written. I am able to ask questions and get much more background and details and then the story almost writes itself.

I called up my friend Barb to ask her for a story and it took us a bit to come up with an idea but then we went to town. So I\’m thinking if you would like to contribute a story or even thinking about it – lets get together on the phone and maybe we can come up with something just in talking. If not, we will at least have a nice phone conversation and get to know one another better.

  1. Grateful that Mass will start again in my parish tomorrow. Our Diocese closed Churches on March 13th and they are reopening with many directives this weekend.
    A couple on months ago found a cast iron griddle in a thrift shop nearby. It is great. Perhaps make sure your pan is hot enough by sprinkling a few drops in the center of the pan and see if they sizzle…if they do you are good to go.

  2. Good to hear from you Patty. All is well here, just another day in isolation. I go to the grocery store and CVS and that is about it. You are staying busy with recipes and interviewing people for stories. Great for you. Hope the pets are well.
