Writing this on Wednesday and looking forward to driving to Albany (Oregon of course) to have Thanksgiving with my sister and family. Today I made a broccoli salad which sounds simple enough but actually is quite a bit of work. (For a lazy cook like me anything that takes more than an hour is a lot of work!) Anyway the bacon is fried, the slivered almonds are toasted, the grapes are cut in half and all that remains is to cut up a cup of green onions and I’m good to go. Add the dressing just an hour before. It is very super, delicious.
Have I shared it before? Probably . . . but just in case you are wondering.
4 cups broccoli broken into small parts
1 cup golden raisins
1 cup halved grapes
1/2 cup sliced green onions, diced
1/2 pound of crumbled fried bacon
1 cup mayonnaise
1 Tablespoon vinegar
1/4 cup sugar
1 cup toasted slivered almonds (toasted in bacon fat), drain on paper towel
Combine: Broccoli, raisins, grapes, green onions and bacon.
One hour before serving: Combine mayonnaise, vinegar and sugar in small bowl,
stir well and mix into the salad.
Suggested Servings 10-12 (only people keep coming back for seconds and thirds so it’s really only like maybe six). I’m making a double recipe.
